Kyoto's summer tradition is “Kawadoko”or the river bed. The river bed in Kibuneis only 20 to 30 cm higher than thewater. The water is so close that if youreach out your hands, you can touchthe cool flow of the river. Hearing the peaceful flow of water , I visited “Nakayoshi”, the traditional Japanese restaurant where Japanese cuisine can be leisurely enjoyed. I was welcomed by the third master of the restaurant, Mr.Yohei Nakamura. The master himself holds the knife and supervises all the dishes as a head chef. He is determined to cook each steps of the dishes after the customers arrive, not preparing anything in advance. It does take a little more time, however, the time spent listening to the river flow, closing my eyes from time to time, turned out to be the most luxurious time for me with busy modern-dayschedule. All the dishes were delightful to the eyes. Savoring the delicious cuisine in a peaceful space surrounded by greenery and water was the finest luxury to enjoy this summer.

For example, “Hirofumi” has a dynamic flow of water that runs from a height like a waterfall. The beauty and the quiet strength of nature is present there. It is a powerful scenery that one will never encounter with the calm flow of Kamo river in the middle of Kyoto City. This river bed built over the water is named Ugenta's Bed. The chef's love for the Kibune's water flow is expressed through the cuisine. The renowned dish,“Ayu no Shioyaki”or the grilled salted sweetfish, is beautiful for the eyes as the dish resembles the river and the fish looks as if it would start to swim away. The joy of Japanese cuisine shines through because the four seasons are always being captured in every dish. The Japanese sensitivity for abundance of beauty delights the eyes of every customer.

A waterfall stands right across from the seats. There is flowing body of water on either sides of customer seatings. Beniya's “kawadoko” river bed is the largest in all of Kibune. Here customers can enjoy viewing the unique currents of the river, 360 degree saround them. With astounding scenery and dishes, you are sure to enjoy a great conversation with those who are close to you. Please don't worry that a summer in Kibune is not complete if you cannot visit one of the river beds. "Torii Chaya" offers refreshments and cooling meals that anyone can enjoy casually. Okami or the head lady welcomes everyone with a cheerful smile. You are guaranteed to feel refreshed after sipping on a cold somen noodles with big chunks of ice in them. The texture was so smooth as it slid down my throat, and it was utterly delicious. KURAMA TSUJII

Kurama is placed beyond a mountain from Kifune. In summer, nature wind is very confortable. But in winter, a lot of snow permitted going outoside of the houses in the past. Charcoal claftsmen have made tsukudani as a preserved food. It is an origin of Kurama-Tsujii. From the past,products are made politely by human hand one by one. "Sin-buki asadaki" -limited product only in summer- will started to sell from July. It is butterbur pickled with salt for a month, has special smell & a little bit bitter taste. The taste has been fostered in the area where human lives with nature. Summer season will come soon in Kifune & Kurama with forest & water benefit.
